Starting at the top left, 11 o'clock is Uncle Ben's boil in a bag Thai rice. Going clockwise, 2 o'clock is Nando's sweet chili sauce with eggplant, tofu, and chickpeas. 4 o'clock is young pan-seared brussel sprouts spritzed with Bragg's Liquid Aminos.
Bottom center at 6 o'clock is two stuffed mushrooms which were gently warmed on the bottom. Their raw stuffing was mushroom stems, spring onion, and two types of fresh basil--green and purple, with a dash of olive oil to hold it all together. Bottom left at 7 o'clock is zucchini with garlic and red onion.
Aunt B is not a vegetarian and in particular she's not a fan of tofu unless it's pretty well hidden in a sauce, but she gave it two thumbs up. Although as the meat-eater in our twosome she had to eat some pretty bad looking things in Lithuania like tongue (of what animal I am not sure), and raw something that she was not sure of, except that it was red/pink and for breakfast. So I imagine known vegetables must seem rather mild in comparison.
